When hosta plants are at least 2 years old, so your plant doesn't die out, You can harvest the little shoots that pop up in the Springtime. You should harvest the shoots around the outside edges, and leave the shoots in the middle as to allow the plant to continue to grow. Hosta can be chopped up and put into stir fry, or it can be drizzled with olive oil and herbs and baked, just as you would do with asparagus. You can also wrap it with bacon and bake.
