Home made Navy Bean Soup with Rosemary.

Yesterday for lunch we had a nice navy bean soup. Since the weather was cool this week along with rain for two days it seemed like the perfect comfort food to have while staying inside. This was a very simple recipe and you can use dry beans (which are always the best) or you could used canned beans, either navy, great northern, or canneli. I used the dry navy beans.

Bean Soup

2lb bag dried white beans of your choice, cooked

1 medium onion chopped

1 pound crispy fried bacon, crumbled

Fresh chopped rosemary for garnish

salt & pepper to taste

Rinse and cook the beans, or use your canned beans from the grocery. Add diced onions and cook for about 15 min more on low heat, add the crumbled bacon. When serving use a little rosemary chopped very finely to add to the soup. I made hushpuppies to go along with mine because I normally make home made cornbread but was out of cornmeal and did not want to go out in the rain to get more.
