Yesterday I made my first batch of French Macarons. A macaron (/ˌmɑːkəˈrɒn/ mah-kə-ROHN; French pronunciation: [makaʁɔ̃]) is a sweet meringue-based confection made with egg white, icing sugar, granulated sugar, almond powder or ground almond, and food coloring. So let me tell you something folks, if you think making a small cookie is no big task then let me encourage you to make the macaron. The ingredients are very few, that is not the task of making them. Where it gets tricky is in the combining of the eggwhites into the flour mixture and its all about the length of time you fold them together. Haha. If you don't fold them long enough they will rise and crack if you fold to long they will be flat and ugly so it may take a few attempts before you get them right. I bake a lot and I was lucky enough to get them almost to a perfection on the second batch. I was like YES!! They have what is called feet,(which is the section at the bottom of the cookie where it rises, and they had shine which is of the utmost importance along with a smooth top. Anyway the challenge is good and it will really make you happy when you finally accomplish them and they look as they should. There are several videos on YOUTUBE on how to make the French Macaron.
